-1 chopped red bell pepper
-5 green onions
-5 beaten large eggs
-1/2 tsp red pepper flakes
-1 tbsp chopped cilantro
-4 flour tortillas
-1/2 cup shredded Monterey Jack cheese
-1/3 cup salsa
-Nonstick cooking spray
-Spray medium nonstick skillet with cooking spray. Heat over medium heat until hot.
-Add bell pepper, green onions and red pepper flakes. Cook and stir for 3 minutes.
-Add eggs to vegetables. Reduce heat to low and stir for 3 minutes. Sprinkle with cilantro.
-Stack tortillas and wrap in paper towel.s Microwave at high for 1 minute.
-Divide egg mixture among tortillas. Sprinkle with cheese. Fold sides over to enclose filling.
-Serve with salsa.
