April Recipe of the Month

Beef Stroganoff

Servings: 4
Prep: 10 minutes
Cook: 20-25 minutes

-2 lb rump steak
-2 sliced onions
-4 oz butter
-8 oz button mushrooms
-1/2 tsp thyme
-1/2 tsp salt
-1/4 tsp black pepper
-10fl oz sour cream
-2 tsp mustard

-Cut steak into strips
-Melt butter in a frying pan. Add onions and fry until softened. Stir in mushrooms and cook for 2 minutes.
-Push the onions and mushrooms to the side of the pan. Add steak strips and fry until they are browned on all sides.
-Mix in the vegetables and add thyme and other seasoning.
-Mix the sour cream and mustard and stir into the beef mixture.
-Cook for 2 minutes.
-Adjust seasoning and serve with hot buttered noodles or rice with sprinkle with parsley.
