Chocolate Cherry Cookies

Servings: 4 dozens
Prep: 15 minutes (+1 hour refrigeration)
Cook: 8 minutes

-1/2 cup of softened butter
-1/2 cup of sugar
-1 egg
-2 squares of unsweetened chocolate, melted and cooled
-2 cups of cake flour
-1 tsp of vanilla
-1/4 tsp of salt
-1 cup semi-sweet or milk chocolate chips
-~48 Maraschino cherries (well drained)

-Beat butter and sugar in large bowl until light. Add egg and melted chocolate, beat until fluffy.
-Stir in cake flour, vanilla and salt until well blended. Cover and refrigerate until firm, about 1 hour.
-Preheat oven to 400F. Lightly grease cookie sheets or line with parchment paper.
-Shape dough into 1-inch balls. Place 2 inches apart on prepared cookie sheets.
-Make deep indentations with in center of cookies (with knuckle of finger). Place cherry into each indentation
-Bake 8 minutes or until set.
-Meanwhile, melt chocolate chips in small bowl over hot water. Stir until melted.
-Remove cookies to wire racks. Drizzle melted chocolate over tops of cookies while still warm.
-Refrigerate cookies until chocolate is set.
