French Apple Pie

-1 1/4 cup of all purpose flour
-1/3 cup of butter, cut into small pieces
-1 tbsp of sugar
-2 tsp of ground almonds
-1 egg yolk
-2-3 tbsp of cold water
-Pinch of salt

-1 pound of cooking apples, cooked without sugar and puréed
-1/4 of sugar
-grated rind of 1/2 lemon
-2 cooking apples, peeled, cored and thinly sliced

-1tbsp of lemon juice
-2 tbsp of confectioner’s sugar

-To make the dough, sift the flour and salt into a bowl, cut in the butter and rub the fat and flour together until it resembles fine bread crumbs.
-Add the sugar and almonds.
-Stir in the egg yolk and enough cold water to mix to a stiff dough.
-Tip out onto a floured surface and knead lightly for 1 minute.
-Wrap in plastic wrap and chill in the refrigerator for 30 minutes.
-Roll out the dough on a floured surface and use to line an 8-inch tart pan.
-Set on a baking sheet or pie pan.
-Add the sugar and lemon rind to the apple purée and spoon into pie shell.
-Arrange the sliced apples neatly over the surface. Brush them with lemon juice and sprinkle with the confectioner’s sugar.
-Bake the pie in a preheated over (475º) for about 25 minutes or until golden brown.

Serve warm or cold!
