Name: Hawaian Chicken Burger
Ingredients:
- 2 lbs of chicken breast, skinless, boneless
- 5oz of bacon
- 3 tbsp coconut milk
- 1 tbsp chopped cilantro
- 1 tbsp ginger
- 1 garlic clove
- 1 lime juiced
- 1 tbsp olive oil
- 4 slices of tomato
- split buns
- salad leaves
- salt and pepper
Relish Ingredients:
- 1 cup pineapple diced into 1/4 inch cubes
- 1/2 cup mango diced into 1/4 inch cubes
- 2 tbsp water chestnuts diced into 1/4 inch cubes
- 2 tbsp toasted macadamia nuts
- 1 tbsp parsley
- 1/4 cup olive oil
- 1 tbsp balsamic vinegar
- salt and pepper
How to prepare relish: Mix all ingredients and keep chilled
How to prepare burgers: Heat a grill pan or large skillet. Place the chicken in food processor and pulse until coarsely chopped. In a large bowl mix together chicken, coconut milk, cilantro, ginger, garlic, and lime juice. Season with salt and pepper. Chill for 1 hour to allow the flavors to blend. Prepare bacon as you desire in skillet until cooked. Allow bacon to cool and drain bacon grease out of skillet. Divide the chicken mixture into four evenly sized burgers and drizzle with olive oil. Place the burgers on the grill/pan and cook for 4 to 5 minutes on each side, until golden and cooked. To assemble burgers, place a salad leaf on each half of the bun, followed by a slice of tomato and a chicken burger. Top with bacon, relish, and sprinkle with cilantro leaves. Add the top half of the bun and serve.
